Have you been getting your bake on during lockdown? If you’re bored of cookies and pie, why not try something a little different? Like this stunning “rainbow prism cake,” inspired by Japanese pop-up restaurant owner and photographer Hiroya Tsunekawa.
It looks incredible, but it’s actually really simple. You only need 30 minutes and five ingredients: water, milk, granulated sugar, shaved ice syrup or fruit juice, and agar powder – a natural vegetable gelatin counterpart that’s available at Whole Foods, Walmart and Asian markets. Tsunekawa shared pictures of his stunning milk gelatin cake on Twitter, and people are going crazy for it. Well, why have a regular cake when you can have a rainbow cake?

Luckily, SoraNews24 translated the rainbow prism cake recipe into English.
The first step is to combine 4 grams (0.14 ounces) of agar powder, 150 milliliters (5.07 ounces) of water, and 60 grams (2.12 ounces) of granulated sugar into a pot. Bring it to a boil, then turn off the heat and stir in 300 milliliters (10.14 ounces) of milk. Transfer your mixture into the fridge to let it set into a gelatinous base of your cake.
Then, get a second pot and repeat the first step. But this time, don’t add milk to the mixture when you’ve taken it off the heat. Instead, add another 300 milliliters (10.14 ounces) of water and 20 milliliters (0.68 ounces) of shaved ice syrup or fruit juice. Pop this second mixture into the fridge so it can set.
If you want another color for your cake, repeat the previous step with different syrups or juices. This creates the rainbow prism effect. Make sure you let each mixture gel in the fridge for no less than 30 minutes. When you have all your colorful gelatin mixtures, cut them into small cubes and arrange them on top of the white gelatin base.
When you cut into the cake, the prism effect becomes apparent. As for the taste, SoraNews24 says it’s “sweet and creamy.” And, as you’d expect, it has a “jiggly texture.”
